I am a big fan of the north star chopped salad from the North Star cafe (started in Columbus). They had one about five minutes from my house and they were my go to healthy meal when I lived at home. I think I ate one atleast once a week!
There is no north star in Lexington which has led me to this copy cat recipe. And might I say I think I've got it almost perfect.
Salad:
Kale (as much as you want)
Radicchio (as much as you want)
2 slices of Honey Roasted Turkey, chopped into small pieces
A sprinkle of Bacon Bits
1/2 Avocado, cubed
1/2 Finely Chopped Apple
A sprinkle of Chopped Almonds
A sprinkle of Blue Cheese Crumbles
Dressing:
6 tablespoons Olive Oil
1 tablespoon Water
1 small clove Garlic, minced
2 teaspoons Honey
2 teaspoons Dijon Mustard
6 shakes of Salt
6 shakes of Pepper
White Vinegar to taste, I don't like the dressing sweet so I end up with at least 5 tablespoons
Much love, Caroline
